Hot peppers
include a variety of species from the genus Capsicum. There are numerous
varieties, colors, and shapes. Hot peppers are easily grown in the home garden
as an annual or perennial. The Scoville scale was developed by Wilbur Scoville
in 1912 as a heat index for peppers. While the actual heat intensity varies
within each variety, there are general recorded ranges for most peppers. The
most intense pungency currently recorded is 577,000, from a variety of Habanero
pepper. Sweet peppers rate 0, and mild peppers rate only 500-2500.
